Herb ‘n Mustard Marinated Veggie Kabobs

Ingredients

  • 4 vegetable kabobs
  • 1/2 cup extra virgin olive oil
  • 1/2 cup citrus juice (we use a combination of whatever is in the fruit bowl)
  • 1/4 cup prepared mustard
  • 1 T . raw local honey
  • 2 cloves minced garlic
  • 2 T . fresh basil leaves , roughly chopped
  • 1 T . fresh oregano , roughly chopped
  • 1/2 t . black pepper

Instructions

  1. Place veggie kabobs in a baking dish. A 9 x 13 is a good size for four kabobs.
  2. Whisk all ingredients together in a small bowl.
  3. Pour marinade over the kabobs.
  4. Cover and refrigerate for at least two hours. After an hour or so, you can flip the kabobs.
  5. Heat your grill to medium. Place kabobs on the grill, reserving marinade, and grill for about 5 minutes before flipping them.
  6. When you flip the kabobs, baste with remaining marinade. I baste 2 or 3 times during cooking.
  7. Enjoy!
