1Cupunsweetened almond milk(or dairy-free milk of your choice)
1/4cupgrapeseed oil(or other healthy oil of your choice)
2teaspoonsvanilla bean paste or vanilla extract
Fruit and real maple syrup for topping

Instructions
In a medium mixing bowl, combine gluten-free flour, baking powder, coconut sugar, guar gum and sea salt. Mix to combine.
Separate four eggs, placing the yolks atop the flour mixture and the whites in a small mixing bowl.
Using a hand mixer, whip the egg whites until the hold stiff peaks.
Atop the egg yolks, add the milk. Stir until smooth.
Add the oil and vanilla bean paste or extract to the mixture. Stir again to combine.
Gently fold in the egg whites until mixture is combined.
Preheat waffle iron. Spray with non-stick cooking spray of your choice. I use coconut oil spray.
Pour batter into waffle maker. My waffle maker requires a generous 3/4 cup of batter per waffle. Close the lid and cook according to manufacturer's instructions. (Time will vary by waffle maker.)
A tip on knowing when waffles are done in waffle makers: the steam coming from the waffle maker will slow when the waffle is done. In my experience, most Belgian waffles take between 5 and 8 minutes to cook. Just a guideline for your consideration...
Top with maple syrup and fruit of your choice. Enjoy!
