Cornbread Waffles, Gluten-Free and Dairy-Free

  • 1 3/4 cups Johnna's Favorite Gluten-Free Flour Blend
  • 1 1/4 cups Gluten-Free Cornmeal
  • 1 Tablespoon Baking Powder
  • 1 1/2 teaspoons guar gum
  • 2 cups non-dairy milk (I use unsweetened almond milk)
  • 2 large eggs from happy hens
  • 3 Tablespoons grapeseed oil
  • 2 teaspoons maple syrup or honey
  • non-stick cooking spray


  1. In a medium mixing bowl, combine all dry ingredients. Stir until well mixed.
  2. In a small mixing bowl, combine all liquid ingredients, whisking until well combined.
  3. Add liquid mix to dry. Stir until just combined.
  4. Heat waffle iron. Spray with non-stick cooking spray. Pour in 3/4 cup to 1 cup of waffle batter. Cook according to manufacturer's instructions. In my waffle iron, these were done between 6 and 8 minutes. When the amount of steam coming out of the waffle iron is greatly reduced, this is an indication that the waffle is done.
