Day 7, 40 Days of 40: Vegan Dinner and Trashy TV

One of my favorite things to do on Sunday night is to watch trashy television and have a yummy vegan dinner.  While I really enjoy it, I rarely allow myself the time to sit and watch two hours of TV while not multi-tasking.

This week was different, I planned ahead to allow myself an evening uninterrupted.  I planned dinner so we could eat right as Desperate Housewives came on (an uncharacteristically sad episode) and wrapped up the evening watching GCB.  I thought I might like GCB after watching one episode, but the second episode bored me. I still enjoyed doing a bunch of nothing for a couple of hours. 

For dinner, we had Bang Bang Tofu Lettuce Wraps.  I’ll share the recipe soon.  While it isn’t really unhealthy, something about it satisfies my craving for “junk” food. 

A super yummy dinner and a couple of TV shows, I dig it.
