I love teaching baking and cooking classes to those who want to learn more about gluten-free and healthier eating. Sometimes it’s a dessert class, sometimes it is holiday themed. This time around it was granola bars, breakfast cookies and homemade LaraBar-like creations taught by my friend Stacy.
This was the first time I’ve co-taught a class and it was fun. It was also the first time my class wasn’t filled with gluten-free students. Aside from me and Stacy, only one person in the class was gluten-free. I’m conflicted about this, as I want to help those who eat gluten-free find tastier, faster, more economical ways to create in the kitchen. But I am also intrigued by this…people are starting to look beyond the gluten-free label and are willing to try it even if not medically-necessary.
I was having so much fun that I neglected to get a photo of me and Stacy with our fun group of students. Instead, I’ll share a picture of my Giving Thanks breakfast cookies that I shared in the class. They were delicious!
