Yep, another “not a sweet” post from me…but this one for good reason, really!
Today is National Corndog Day. When I stopped eating gluten, I didn’t think I would ever again have fried mozzarella sticks, onion rings or a corndog. I was really sad about the corndog. It has always been a challenge to have a vegetarian corndog but I found frying anything that did not contain gluten to be disastrous. Until today.
I used this recipe from the Baking Beauties website. For the hot dog, I used a Tofu Pup from Lightlife. It is the only non-gluten veggie hot dog I have been able to locate and it’s also my favorite veggie hot dog. I used the recipe minus the bacon drippings and had a corndog just as good as any state fair offers. Add to that sweet potato fries with pineapple chile ketchup and I was in heaven!
And about the state fairs and why I am telling you about National Corndog day…it’s because of my next 52 food blog adventure. It’s 52 Foods on a Stick. It won’t be strictly vegetarian. It won’t be strictly gluten-free. It won’t be strictly sweets…but it will be fun, full of grease and nutritionally-hollow calories. From May through September I, along with friends, will seek out and sample 52 different foods on a stick. If you’ve got suggestions on where we should go and what we should try, please share.
In the next few weeks, I hope you’ll see some design changes here that will make it easy to navigate between 52 Donuts, 52 Sweets and 52 Foods on a Stick. I love a food blog project that has a definite beginning and an end and I also like a blog that is easy to navigate. I’m working on it, but there’s so much to learn! I am better suited for baking and will gladly trade corndogs, cupcakes or cookies for your expertise. 🙂
