Adopt a Gluten-Free Blogger: Wheat Free Meat Free

When my physician told me I had to eliminate gluten from my diet, she said, “This is going to be a little tricky since you are vegetarian.”  No way, I thought, I can do this.  Surely there’s not gluten in everything I eat.

My doctor was right, it was tricky.  I spent most of a day in the grocery store reading labels of the foods I liked to eat.  No more veggie burgers, veggie dogs, seitan, burger crumbles.  And that was just the meat replacement products I had been using!  I had to learn about bread, cereal, sauces and condiments.  There was a lot to learn.  I turned to the internet for help and Wheat Free Meat Free was one of the first gluten-free vegetarian blogs I discovered. Kalinda’s recipes have been a huge help and introduced me to a less-processed way to eat.

For this month’s Adopt A Gluten-Free Blogger, I made Kalinda’s Millet Breakfast Casserole.  Two years ago when I began my gluten-free journey, millet was new to me.  It has recently become a staple in my cupboard.  This is the first casserole I have made with millet and it turned out so well. It’s a hearty breakfast, perfect for starting off a busy day!

This casserole was great hot from the oven and also reheated well for breakfast the second day.  I hope to try it with other berries, perhaps raspberries or blackberries, soon. This five-ingredient recipe is entering frequent rotation in the breakfast offerings at our house!

    Hi Johnna,

    I owe you a belated thank you. When I first heard I was adopted I subscribed to 52 Sweet Treats not realizing Johnna 52 was a separate feed, so I missed when this post went up.

    I'm glad you enjoyed the casserole and your pictures are much lovelier than my originals. (I might have to make it again sometime to get better pictures.)

    This is the first time anyone has adopted me, so it truly is an honor. Thanks! 😀
