If you’ve followed along with my journey for long, you know mid-way through the 52 Donuts journey I received a medical diagnosis that forced me to eliminate gluten from my diet. I’m so glad I did, as I feel terrific now. I eat better than I ever have in my life without gluten. I’ve discovered a terrific new way of baking, eating, living.
But I really, really miss donuts.
Each month several gluten-free bloggers join together for the Ratio Rally. If you are unfamiliar with baking by ratio, check out Ratio by Michael Ruhlman. In gluten-free baking, it is quite possible to easily modify a traditonal/gluten-full recipe to gluten-free just by following the ratios. This requires weighing versus measuring of ingredients. In my limited experience baking by ratio, I’ve had great success. I hope to explore it more soon.
