Goodness, it’s hot here! While I’d like to sit on the deck and have an icy cocktail every afternoon, I have to be somewhat productive so I’ve concocted a non-alcoholic drink for this time of year. The zing of ginger keeps me moving when the Summer heat and humidity conspire to slow me down.
Maybe you could use a chilly pick-me-up, too. I’m sharing today, just in case. 😉
Ginger Lemon Cooler (Makes 1 serving)
1/4 cup fresh squeezed lemon juice
1 T. ginger juice (Fresh or bottled from Ginger People.)
1 tsp. agave or 4 drops of liquid stevia, more or less to your taste
8 oz. club soda or seltzer water
Lemon slice for garnish
Fill glass with ice. Mix lemon juice, ginger juice and sweetener. Top with club soda or seltzer. Add a slice of lemon so it looks pretty. Enjoy!
