A Day of Thanks and Gratitude

Thanksgiving prompts us to look at all of the things for which we have to be grateful.  Today, even more so than other days if that’s possible, I’m so very grateful for each of you who read my blog, who cook and bake my recipes, who share your stories, successes and challenges in the comments. On this very food-centric holiday in the U.S., having a spot to share and discuss what happens in my kitchen and yours with like-minded folks is a source of much gratitude.

I’m grateful because you remind me I’m not the only one trying so very hard to eat in a way that is right for my health.

I’m thankful each time you let me know you cooked a recipe I worked hard developing. Not just that, but that it worked; you enjoyed making AND eating it.

I’m appreciative of each of you. I hope your Thanksgiving filled your tummy and heart.

And because no post is complete without a photo, here’s what we had for dessert today.  A little bit of crunch thanks to Trader Joe’s Grand Slam (fancy Cracker Jacks with almonds, peanuts, cashews and pecans), Pumpkin Creme Brulee, tiny little pumpkin pies, dark chocolate tarts with a macadamia shortbread crust baked in mason jars and a chocolate pumpkin parfait.

    Wow! Super cool desserts! Good thing I don’t have a TJ’s nearby. I think I’d go nuts over that Grand Slam concoction. Really. No pun intended.

      The Grand Slam goodness is problematic. While it’s a smaller bag than a standard chip bag, it’s certainly more than one person should have in one sitting. But once it’s open… 😉
