More Cans Than Can’ts When Eating Gluten Free
There are more cans than can’ts when eating gluten free, but this isn’t the introduction to a medically necessary gluten-free diet many of us have. When I was told at the doctor’s office that I had to eliminate gluten, she handed me a single piece of paper. On the front and back of that piece of paper was a list of all of the “can’t” foods. Bread, rolls, flour, tortillas, breaded foods, anything fried, donuts, cake, on and on.
It was OVERWHELMING.
What would have been more helpful: a list of all of the things someone on a gluten-free diet CAN eat. The entire fruit and vegetable section. Most cheeses. Most meats. ABUNDANCE. There is so much that is available to eat on a medically necessary gluten-free diet.
I wish I would have been encouraged to look beyond standard American fare, to explore eating Thai, Indian, Ethiopian, Latin American food that relies heavily on naturally gluten-free foods.
I wish I would have been told that I didn’t need to replace everything I had been eating with its expensive gluten-free counterpart. At least not right away.
I wish I would have been told that this is possible, it is very do-able, it can be delicious and my food choices will be abundant. There are more cans than can’ts when eating gluten free.
If you are finding yourself new to eating gluten-free, I encourage you to take on this mindset. There is SO MUCH that you can eat.
