The Spring Into Healthy Eating program is 21 days of delicious single-serving recipes, 21 days of healthy habit challenges, 21 days of support and encouragement from yours truly and a fabulous community of folks just like you also doing the program. How does this work?
Spring into Healthy Eating starts on Monday, April 20th…but the fun begins the moment you register. I’ll e-mail a starter kit to you that explains everything you need to know. It also includes the shopping list for the first week so you can get started stocking your pantry.
Every Friday, you’ll receive a shopping list, a menu plan, a week’s worth of original recipes created by me and pointers for succeeding in the upcoming week. The menu runs Monday-Sunday, giving you the entire weekend to prepare for the upcoming week.
Each day, we will all be eating the same 3 meals, the same 2 snacks. We will all be preparing the same meals so we can discuss food preparation, ingredient choices, why we are eating what’s on the menu. It is total immersion in healthy cooking and eating. Plan to spend a bit more time than usual in the kitchen, but know that after 21 days, you will have an entire new set of skills, will have tried many new ingredients and know how to prepare many new dishes. This program is a game-changer!
Every day from April 20th-May 10th, you’ll receive an e-mail from me with a Daily Healthy Habit Challenge. Don’t worry, these are all fun (I promise, lots of fun) and will help you find your version of healthy as it relates to food and to life!
In addition, you have the option of joining our super secret Facebook community. There you will meet a terrific group of folks who have completed the program before and folks who, like you, are doing the program for the first time. It’s a judgment-free zone (we hear that phrase a lot, but I truly mean it), full of support and encouragement.
You’ll also find options when registering that include one-on-one coaching with me. If you are serious about transitioning into a healthier way of eating, coaching with me can be the extra nudge you need to stay on track. Does this program fit into an already-busy life? Yes! You will definitely find yourself spending a bit more time in the kitchen and grocery shopping may take a few more minutes and more dollars. You’ll also find you are having more fun cooking and more fun going on grocery shopping adventures.
Is this only for people in the Kansas City area? NOPE! For the first time ever, the entire program is being offered on-line. As long as you are 18 years of age or older, you can participate in this program from anywhere.
What about the fellas? Or is this for ladies only? Fellas are most welcome. My favorite fella will be joining in the program again this year. It’s highly recommended to do this program with those you share your life with, too. It’s fun to learn to cook together, to get healthy together. And kitchen dance parties are a blast!
Is this a Juicing/Detox/Weight Loss Plan? No, no and no. There are smoothies included in this plan (and you’ll learn how to make smoothies that actually taste great). This isn’t a detox plan, there are no expensive supplements to buy, no all-liquid-diet days. As for weight loss, you might lose weight. You might gain weight. The goal is healthy eating.

What in the heck will I be eating for 21 days? Food that is ding dang diggity delicious! My program is focused on what we will be eating, not what we won’t. That said, Spring Into Healthy Eating is free of gluten, dairy, eggs and meat including seafood. And I’m gonna go out on a limb here and say you won’t even miss any of it. This is a plant-based program, but first and foremost it is a program of healthy eating that will introduce you to cooking techniques and recipes to make the best ingredients pleasing to your palette. This plan does include tree nuts and minimal soy. If either of those (or other ingredients) are a concern for you, please drop me a line before registering to see if I can customize the menu a bit to make this work for you. I’ve had great success making minor modifications to the plan to help folks in your shoes. Just holler at me!
Will I be hungry? NO! While this plan includes 3 full meals and 2 snacks each day, it also includes a list of foods that you can eat anytime you want in any quantity. And I’m not just talking Brussels sprouts here. If you are hungry, I want you to eat. The goal here isn’t deprivation.
I have a specific medical condition. Is this program safe for me? As with any program, always consult with your medical health care professionals before starting a new program. This program is not a substitute for professional medical care nor does it provide medical advice.
Do I need special kitchen equipment? A blender is about as fancy as it gets with this program. Each week I’ll share a few suggestions for kitchen items that might be handy, but none beyond a blender are required.
If I’m not eating meat/eggs/dairy for 21 days, where will I get protein? Rest assured, this program has been developed to make certain you are getting 46-56 grams of protein a day, the amount recommended for adults. Plus there are options to add in even more.
I’m addicted to coffee/wine/diet soda. Can I have those on this plan? Diet soda and anything containing artificial sweetener is greatly discouraged. One to two cups of coffee a day are certainly fine. And I’ve even included a Special Splurge in this plan so wine isn’t completely off limits.
Do I have to be on Facebook to participate? No, participation in the Facebook group is completely optional. While helpful, it is not mandatory.
Why did you create this program? Not so many years ago, I was morbidly obese. Then I lost a bunch of weight and got really sick with an autoimmune disease. (Thin doesn’t always equal healthy, fluffy doesn’t always equal unhealthy.) I found health through food. And then I realized I HAD to share what I had learned with others. I hit the books, studying to get my Living Foods Chef certification and my Nutritional Education Trainer certificate. But even with all of the fancy education, I realized what really enabled me to help wonderful folks like you was walking on the same path. I used to be a smoker, I used to drink so much diet soda. I used to eat half of my meals from fast food drive-thrus. I understand the challenges involved with making healthy eating changes. And I can help you with those challenges! Together we will confront these challenges, eat delicious food AND make lots of healthy changes all while having a ton of fun.
